I've got this from Lufthansa for my flight on Friday, obviously they haven't updated the requirements yet:

Please observe the following regulations for your trip to Hongkong:
1) All travellers entering Hong Kong must fill out the online Health Declaration Form.
2) A confirmation in English must be presented for a 21-nights hotel accommodation in one of the hotels specified by Hong Kong authorities. (7 or 14 nights for travellers with a valid vaccination certificate, depending on visited countries).
3) Passengers must provide a negative Covid-19 PCR test result in English (taken earliest 72 hours before departure), as well as separate, written proof in English that the test laboratory is ISO 15189 accredited or approved by national authority of the country where the test is taken.
These regulation also apply for passengers with international connecting flights ex Hong Kong.
